Sweet and Sour Chicken
Ingredients
1-2 pounds of cubed chicken
2 tablespoons of oil
3/4 each green pepper and red pepper (I usually only use red peppers, though)
3 tablespoons of cornstarch
1/2 cup soy sauce (I use the low sodium)
1 can 20oz. chunk pineapple
6 tablespoons of white vinegar
6 tablespoons of brown sugar
1/2 teaspoon of ground ginger
Directions
Cook and stir chicken in hot oil until browned. Add peppers - cook and stir 1-2 minutes. Mix cornstarch and soy sauce. Add to pan with pineapple, vinegar, sugar, and ginger. Bring to full boil. Cook sauce separate to thicken then pour over chicken and peppers. (I don't do that - I just throw everything in to cook all at once).
Serve over rice - I usually make long grain and wild rice with this dish.
Beware - the pineapples really retain their heat so be careful when you eat it your first few bites - Craig ALWAYS burns his mouth because he doesn't listen to me.
